Savour Patisserie has exploded onto Brisbane’s dessert scene since opening just three months ago at Westfield Chermside. Run by two brothers, Savour is revitalising traditional French desserts with a modern Australian twist. And let me tell you, they are REALLY onto something good!
Savour is the brainchild of Matt and Daniel Jefferis, who also own and run Vue Lounge in New Farm. Daniel, the chef half of the duo, fell deeply in love with French cuisine after spending time in Paris. Inspired by how much the French adore their desserts, he decided to do Brisbane the biggest favour ever, and open this amazing Patisserie right here at Westfield Chermside. His brother Matt is the Manager of Savour, and North Eats talked to him about why this dessert bar is carving out a reputation for the best – and most stunning desserts in Brisbane.
So, Matt, describe the concept behind Savour.
“The whole experience at Savour is about the desserts. We offer a unique, contemporary take on traditional éclairs, macarons and pastries. Everyone remembers buying those stock-standard chocolate eclairs from their local bakery as kids. Well, we wanted to breathe new life into this dessert by pushing the boundaries and reinventing what’s possible. We’ve combined beautiful, modern flavours to create next-level desserts, and everything we serve is hand-crafted from our special recipes.”
What are some of the most popular desserts you offer?
“The Gold Digger Éclair definitely tops the list. Over our signature choux pastry, we combine chocolate crème, honeycomb and milk chocolate, and finish this with edible gold. Our Jaffa Entremet is also really popular. This is a beautiful and unique dessert – orange and chocolate mousse, delicious brownie, French meringue and almond dacquoise with a red glaze. It looks just as amazing as it tastes.”
Well, I can say that the Kiss Me Entremet was one of the best desserts I’ve ever tasted.
“That’s a really popular choice. It’s a large raspberry flavoured macaron that’s topped with rose and chocolate crème and fresh raspberries.”
I hear your Macarons are pretty incredible too?
“We’ve created some amazing flavour combinations with our Macarons, like Burnt Salted Caramel, Madagascan Vanilla and Coffee, and Passionfruit and Milk Chocolate. But the favourite seems to be our Raspberry, Rose and Milk Chocolate with the burst of freeze-dried raspberries in the centre.”
And you offer selection boxes as well?
“Yes, we offer different size selection boxes so people can call in, choose their favourites, and that’s dessert at home taken care of! Our staff can provide suggestions, and this option is perfect if you’re entertaining at home or just want to treat the family to a something a little special. A box of six Macarons, for example, is only $15.”
Does your menu change depending on the season?
“Yes, this is something we’re very passionate about. We want to keep our menu fresh and seasonal. In fact, we have some really exciting menu plans that we’re developing right now. With Summer around the corner, we’re working on a range of Cronuts and Éclair Sundaes. And like our other menu items, you just won’t see these flavour combinations anywhere else in Brisbane.”
